Champagne
Blanche Colas Champagne is crafted by Stéphane and Pauline Colas in Trélou-sur-Marne, a small village in the heart of the Marne Valley. When Stéphane took over the family vineyards in 1996, the estate counted just 1.5 hectares—and a wheelbarrow. Today, he works 13.2 hectares, with 9.6 in Trélou and 3.6 in the nearby village of Passy.
The vineyards are planted mostly to Meunier (71%), with Pinot Noir (23%) and Chardonnay (6%) completing the blend. Of the entire grape production, only the finest portion—about 30%—is kept and vinified, while the remaining 70% is sold to négociants. Annual production today reaches around 40,000 bottles.
The entire estate is now certified High Environmental Value (HVE) and Sustainable Viticulture in Champagne (VDC), a testament to its commitment to responsible and forward-looking practices.
"Orizuru" is a blend of 50% Meunier, 25% Pinot Noir, and 25% Chardonnay. Aged for 15–20 months on the lees, blended with 33% reserve wines from the previous vintage. The dosage is 4 g/l.
An ideal Champagne for an apéritif, this has pretty aromas of lemon, yellow cherry, honeycrisp apple, marzipan, elderflower, and brioche.
